Apple Beet Cabbage Salad (a.k.a. Liver Lover Salad)

Ingredients:
2 green apples, spiralized
Juice of ½ fresh lemon
2 c red cabbage, grated
2 c raw beets, red & golden, spiralized
2-3 carrots, spiralized
Handful of chopped radishes
Micro greens
2 green onions, chopped
Parsley or cilantro
Toasted raw almonds or walnuts
Toasted black sesame seeds

Dressing:
¼ c extra virgin olive oil
1 tablespoon of apple cider vinegar – or to taste or fresh lemon or lime juice
2 garlic cloves, finely chopped
Oregano
Chopped garlic
Sea salt and fresh ground black pepper
Directions:
Put all the dressing ingredients in a bowl or screw top jar, whisk, stir or shake thoroughly to combine.
Toss the apples in the lemon juice to prevent browning.
Put all ingredients in a large bowl, toss with dressing, and adjust seasonings if needed.
Serve on a bed of mixed greens or toss in bowl – optional

The combination of apples and beets makes an excellent cleanser of the blood and liver.
Apples are good for elimination, the insoluble and pectin fibres promote bowel regularity, relieving both constipation and diarrhea.

Beets are rich in antioxidants; contain vitamin A, iron and calcium. The unique mixture of minerals and phytochemicals helps the body to resist infection and may boost cellular oxygen and combat disorders of the immune system, blood and liver.

Cabbage is rich in antioxidants which can help strengthen and boost the immune system, helping the body overcome infection. A good source of vitamin C and a natural detoxification of the body.

Happy Spring…..it has sprung….so enjoyed the sunshine yesterday and felt alive…came back from my cabin which was winter wonderland and quiet to spring…..

Spring time is cleanse time….liver needs some TLC

Drink room tempature filtered water with 1/2 fresh lemon juice in the am

Green smoothie:
bunch of kale, spinach, arugula, parsley, dandelion
lemon juice
kefier water or filtered water
blueberries
blend in a blender and enjoy

All help the liver to function efficiently and also promote the flow and emulsification of bile
