Gazpacho Soup

This lovely light summer cold soup makes your mouth dance.  It is full of fresh farm to table ingredients that make you smile.  The fragrance is intoxicating and inviting.  Oh, did I mention super easy and quick to make. For the finishing touch in your bowl, I would add roasted black sesame seeds and microgreens as they are full of calcium. Enjoy!

Ingredients:

Lots of tomatoes, cherry, heirloom – diced
3 Cucumbers – diced
2 Peppers – diced
1 cup Olive oil
Garlic – minced I like lots
Parsley – chopped or your favorite herbs, basil, cilantro, rosemary, carrot tops, beet tops, oregano
Fresh lemon or lime juice, apple cider vinegar or balsamic vinegar
Sea salt and freshly ground pepper
Bone broth or water a little bit

Instructions:

Place all ingredients in a blender or food processor, blend till a bit chunky

Adjust seasonings – chill for about an hour or overnight or just eat it right away 🙂

Tomatoes help to dissolve urea (preventing the formation of uric acid crystals) and reduce inflammation of the digestive tract and bacterial activity in the bowel. They are rich in betacarotene, another antioxidant from the carotene group, which helps to protect eye tissues. They are also rich in vitamins, A, B and C, folic acid and fibre.

Peppers contain capsaicin a pungent smelling and tasting substance that is good for the heart and circulation. They contain vitamins A, and C and antioxidants.

Cucumbers have a very high water content, they are diuretic, anti-inflammatory, help to dissolve uric acid, and are good for intestinal health. They contain vitamins A, B, and C, iodine and sulfur.
