Apple Beet Cabbage Salad (a.k.a. Liver Lover Salad)
Ingredients:
2 green apples, spiralized
Juice of ½ fresh lemon
2 c red cabbage, grated
2 c raw beets, red & golden, spiralized
2-3 carrots, spiralized
Handful of chopped radishes
Micro greens
2 green onions, chopped
Parsley or cilantro
Toasted raw almonds or walnuts
Toasted black sesame seeds
Dressing:
¼ c extra virgin olive oil
1 tablespoon of apple cider vinegar – or to taste or fresh lemon or lime juice
2 garlic cloves, finely chopped
Oregano
Chopped garlic
Sea salt and fresh ground black pepper
Directions:
Put all the dressing ingredients in a bowl or screw top jar, whisk, stir or shake thoroughly to combine.
Toss the apples in the lemon juice to prevent browning.
Put all ingredients in a large bowl, toss with dressing, and adjust seasonings if needed.
Serve on a bed of mixed greens or toss in bowl – optional
The combination of apples and beets makes an excellent cleanser of the blood and liver.
Apples are good for elimination, the insoluble and pectin fibres promote bowel regularity, relieving both constipation and diarrhea.
Beets are rich in antioxidants; contain vitamin A, iron and calcium. The unique mixture of minerals and phytochemicals helps the body to resist infection and may boost cellular oxygen and combat disorders of the immune system, blood and liver.
Cabbage is rich in antioxidants which can help strengthen and boost the immune system, helping the body overcome infection. A good source of vitamin C and a natural detoxification of the body.

Happy Spring…..it has sprung….so enjoyed the sunshine yesterday and felt alive…came back from my cabin which was winter wonderland and quiet to spring…..
Spring time is cleanse time….liver needs some TLC
Drink room tempature filtered water with 1/2 fresh lemon juice in the am
Green smoothie:
bunch of kale, spinach, arugula, parsley, dandelion
lemon juice
kefier water or filtered water
blueberries
blend in a blender and enjoy
Awesome foods to support your liver:
cabbage
dandelion
arugula
watercress
parsley
lemon
bitter greens
All help the liver to function efficiently and also promote the flow and emulsification of bile

Lentil Soup
This is a great nourishing soup for a cold rainy day
Ingredients:
This is one of my favourites. This is a basic recipe –
*1 c red or green lentils, rinsed
4 c homemade chicken or veggie broth or water
2 tbsp olive oil and butter
1 onion, chopped
3 garlic cloves, chopped
2 carrots, chopped
2 celery, chopped
Sea salt and fresh ground pepper
Oregano, curry and bay leaf
Directions:
Sauté onion for about 3 min in the olive oil, add salt and pepper, add garlic and spices sauté for another minute or so
Add carrots, celery sauté till soft about 5 min or so
Add broth or water, bay leaf, bring to a boil, add lentils, then simmer for about 20 min until the lentils are soft
Adjust seasonings
Top with cilantro or parsley
Be creative with this one add in wild rice or yams or potatoes, at the end of cooking add in spinach, kale or swiss chard. Add meat if you want to.
Tips for Preparing Lentils:
Lentils can be prepared the day of serving since they do not need to be presoaked. Place the lentils in a strainer, and rinse them thoroughly under cool running water.
To boil lentils, use two cups of liquid for each cup of lentils. Lentils placed in already boiling water will be easier to digest than those that were brought to a boil with the water. When the water returns to a boil, turn down the heat to simmer and cover. Green lentils usually take 30 minutes, while red ones require 20 minutes.
Lentils, a small but nutritionally mighty member of the legume family, are a very good source of cholesterol-lowering fiber. Not only do lentils help lower cholesterol, they are of special benefit in managing blood-sugar disorders since their high fiber content prevents blood sugar levels from rising rapidly after a meal. But this is far from all lentils have to offer. Lentils also provide good to excellent amounts of iron, magnesium, calcium, zinc and vitamins B1 B2 B3, A and K.

be creative……put into blender add filtered water, blend and walla…..energy for your brain
