Cucumber Tomato Herb Salad

A delightful taste-buds dancing summer salad that will make you feel happy! 

Ingredients:
1 cucumber, diced – keep skin on and buy organic
1 Pint of cherry tomatoes, different colors, chopped in quarters
1 small red onion, diced
Bunch of flat leaf Italian parsley, chopped
Fresh basil, chopped
Fresh oregano
Juice of 1 fresh lime or lemon
Sea salt
Olive oil

Toss all together and enjoy 🙂

Cucumbers: contain vitamin A, B and C, anti-inflammatory, 90% water, can dissolve kidney stones, regulate blood pressure, rehydrates the body, relieves headaches and promotes healthy skin. Add some slices to your water and lemon very refreshing.
