Chicken Lentil Soup

 

Ingredients:

Chicken breast, cut up or chicken from your roasted one that you made your stock from 🙂

1 c red lentils, rinsed

4 c homemade chicken broth or water

2 tbsp olive oil

1 onion, chopped

3 garlic cloves, chopped

2 carrots, chopped

2 celery, chopped

Sea salt & fresh ground pepper

1 tbsp oregano

1 tbsp turmeric

Bay leaf

Parsley

 Directions:

Sauté onion for about 3 min in the oil, add salt and pepper, add garlic for another minute or so

Add carrots, celery, sauté till soft about 5 min or so

Add chicken, oregano and turmeric

Add  broth or water, bay leaf, bring to a boil, add lentils, then simmer for about 20 min until the lentils are soft

Adjust seasonings

Top with parsley

This is a basic chicken soup, you can use noodles or yams or rice in place of lentils, add some greens at end of cooking for added vitamins.

Watermelon Cucumber Mint Salad

I hope your all enjoying these beautiful summer days and the long evenings. I sure am, especially the early morning sun, getting my Vit D and late evening sitting in my front yard with a nice glass of merlot, chatting with the neighbours and hanging with my kitty, Savannah.

A few nutritional tidbits on the ingredients:

Watermelons contain vitamins B and C, minerals potassium and magnesium, are high in water content and an excellent antioxidant.

Cucumbers contain vitamins A, B, C, minerals iodine, manganese and sulfur, they have a very high water content, diuretic, anti-inflammatory, help to dissolve uric acid and are good for intestinal health.

Buying organic is the best choice, but watermelons are not one of the dirty dozen and are on the clean list of conventional, so go ahead and buy conventional, but cucumbers not, buy organic or at the farmer’s market along with mint or grow it in your garden.

Watermelon Cucumber Mint Salad

Watermelon, cubed
1 cucumber, diced
bunch of mint, chopped
1 fresh lime, juiced
1 teaspoon sea salt

mix all together in a bowl and walla
a very refreshing, nourishing and hydrating salad

Happy Valentine’s Day

Happy Valentine’s Day…..it has been awhile since  my last post, my site was down – but it sure feels great to be live again. How was your January?  Are you thinking about health goals? Feeling encouraged to meet them? Have plans to achieve them? If I can help let me know 🙂

Here is an easy raw chocolate snack to make for your loved ones or just for you

Cinnamon Balls

3/4 c raw cacao nibs
12 medjool dates, take the pits out
1 c pecans or walnuts or almonds or all of them
1 tsp cinnamon
1/4 tsp cayanne pepper (optional)
1 tsp vanilla the real stuff
1/2 c coconut flakes
sea salt
put into food processor and process till done
make balls and roll in cinnamon
put into freezer to ‘bake’
then eat with red wine
enjoy 🙂
