Chicken Soup (a.k.a. Hug in a Mug)

I enjoy making this ‘hug in a mug’ chicken soup because it feels just like that, a hug.  It is comforting and reminds me of fond childhood memories of the soup simmering away on the stove and the smell, oh so inviting and welcoming.  Oh, and amazing for your immune system, just like a hug. I also feel that this soup feeds my emotional health as well, not just bringing comfort but joy and deep nourishment that makes me feel looked after.   

Ingredients:
Chopped chicken any cut you like, I like white meat, or leftover roasted chicken
4 c homemade chicken broth – from the roasted chicken you made on Sunday
3 tbsp unsalted butter
1 -2 onions, chopped, I like red ones
3 -5 garlic cloves, chopped
3 carrots, chopped- I like rainbow carrots, more colour
3 ribs of celery, chopped
Sea salt & fresh ground pepper
2 tbsp oregano – fresh or dried, I like my soup to be more herb flavour so I had a full palm full
1 tbsp turmeric
½ spring of fresh rosemary – chopped
1 tbsp paprika
Bay leaf
Parsley

Directions:

Sauté onion for about 3 min in the butter, add salt and pepper, add garlic for another minute or so
Add rest of spices and herbs, except parsley and bay leaf
Add carrots, celery, sauté till soft about 5 min or so
Add chicken
Add broth, bay leaf, bring to a boil, then simmer for about 20 min or so
Adjust seasonings
Top with parsley

add some microgreens into your mug for added nutrients

Garlic – vitamin B6, magnesium, Antibacterial, antioxidant, antimicrobial stimulates white blood cells to fight against bacteria, fungal, parasites and viruses

Rosemary – vitamin A, essential oil, antioxidant, helps to ease gout symptoms, great for tension headaches, stimulated the production and flow of bile which improves digestion

Carrots – vitamin A, magnesium, iron, antioxidant, helps with mental fatigue, good for constipation because of their high fiber content and of course great for the eyes

Celery – vitamins A, B, C, calcium, magnesium, essential oil, great for kidney and bladder stones
